How do I sharpen a knife?

Sharpening your knife regularly keeps it sharp, you can do this yourself. You can sharpen a sword by using whetstones and the right technique. Before sharpening, wet the whetstone, you will notice that it has a coarse and a fine side. You sharpen the knife by moving it over the coarse side of the stone. The most important thing is that you keep the angle of the blade constant so that you keep sharpening at the same angle. For a European knife it is best to sharpen with an angle of 20 degrees, with a Japanese knife an angle of 15 degrees is fine. It doesn’t matter what strokes you use to sharpen the knife, this can be done in long or short strokes.
